Beer Lovers Stew, No beans about it!

First,

It’s all about the beer!…. I’ve tried a bunch, and I’ll keep trying!

My cooking beer of choice at the moment is Guinness. This cool refreshing beer has touched my taste buds in more ways then one. The rich dark flavor blends perfectly with the meat and seasonings used to create this redneck delicacy. And for all you guys out there who are afraid to stink up the house you can rest assure. This is a dish that can be enjoyed cooking inside but is best when it’s cooked on the grill. This cooked beer concoction leaves an aroma that likes to hang around for a day or 2, Just ask my Ex.

First we want to chop up the veggies,

  • Whole onion, sliced and chopped
  • Celery, Maybe a cup or so for flavor
  • Carrots, I love cooked carrots! Couple of cups sliced thin
  • Potatoes, Maybe 6 or 8 sliced thin and diced for faster cooking
  • Bell Peppers, 1 or 2 will do!

Next,

Mix all the veggies together in a large bowl and add about ½ Guinness, Dabs of garlic powder, salt pepper, Worcestershire, butter, and some whatever!

Dump everything into a frying pan or a doubled up makeshift tinfoil pan for the grill. Be careful not to puncture any holes in the tinfoil. We don’t want to loose any of the liquid. The juices from the veggies and the beer will be the base for cooking the meat. So keep it juicy!

Sauté everything together on high for about 10 minutes to soften up the veggies and let the seasonings cook in. Add more butter and beer as needed. Give us a little time to prep the meat.

Doesn’t matter what type of meat as long as you use something. Works with Beef slices, ground beef, chicken and even fish. Usually portions of 2 is all that’s needed.

Whatever meat you choose, marinate it with the same seasoning used for the veggies, It’s important to know that if you’re using ground beef you should always cook and drain the fat before seasoning is added. Unless you like that burping grease up later feeling!

Next,

Carefully place uncooked seasoned meat into cleared out center of tinfoil with veggies still cooking around it. Add more beer if needed and close the lid for a few. Check and flip as needed. Shouldn’t need anymore then 10 minutes depending how hot your grill is and size of your portions. This dish although cooked with beer goes great with any drink. Dump some in a bowl and put on a little Charlie Daniels and enjoy
